This is the thick end of the fillet, next to the rump and therefore has more flavour than the more sought-after centre cut of the fillet. Still extremely tender with a delicate texture that melts like butter, this is the perfect sharing steak for 2-3 people on that special occasion.

Amazing

The best fillet any of us have ever had. Seared on very hot griddle and finished in oven for fifteen minutes. Very easy, very delicious. Have just ordered more!

Succulent Chateaubriand

I cooked this cut for a good friend, it was so good. Succulent, flavourful, delicious. I roasted it for 25 minutes with just salt pepper and a little oil. I rested it for 20 minutes more. Perfectly cooked, deep pink on the inside, delicious flavour, melt in your mouth texture. Served with some green beans and roasted new potatoes, it was a special dinner. We are getting spoiled by Lyons Hill flavours!
