Fillet Steak (Delivery: 22.04)

Although highly sought-after, we find that fillet lacks flavour; however, given the fact Aurox® beef is fully matured, our fillets have an unusually deep flavour.

We keep the fillet as one whole 500g steak, leaving it to you to portion accordingly.

Dry-Ageing
Our beef is expertly dry-aged for around 28 days. We believe any longer is not necessary as our beef has a deep enough flavour already and doesn't need additional support in the form of a mildly cheesy flavour brought about by over-hanging beef.
