Bavette is a long, slender steak cut from the lower end of the belly. This lean cut has a rich taste and a unique texture. A well marbled cut, if cooked medium rare and sliced thinly across the grain, it will literally melt in your mouth.
This is a whole piece and is best cooked as such.
