This is the thick end of the fillet, next to the rump and therefore has more flavour than the more sought-after centre cut of the fillet. Still extremely tender with a delicate texture that melts like butter, this is the perfect sharing steak for 2-3 people on that special occasion.

Dry-Ageing Our beef is expertly dry-aged for around 28 days. We believe any longer is not necessary as our beef has a deep enough flavour already and doesn't need additional support in the form of a mildly cheesy flavour brought about by over-hanging beef.
